Used to be able to turn them off but now all the other Technicians use my legacy network as they prefer it. I have to keep the servers running all the time.

Even when the school is offically closed some come in to view mail etc.

Also I think that it is better for the servers to run all the time as they are designed for that purpose.

However I switch of and unplug all PCs that will not be used over the summer.

I wouldn't turn them off - a reboot would do no harm though.  We keep them running, but don't do any backups.
